NOTES FROM THE TASTING ROOM

> SOUR PROJECT | Our sour meads have been a wild roller coaster of adventure.  When the first batch of Something Something Sour Mead happened, we were scared and then stoked, but we weren't sure how it happened. Since then, some batches have been exemplary, some we've had to send to Old Harbor Distilling to turn into mead brandy.

Our current Sour Orange Blossom, however, is one of the best meads we've ever made.  When I drink it, it brings tears to my eyes. The honey is subtle but persistently floral citrus, amazingly present. The mouthfeel and body are crisp and dynamic... It's a wonderful drink, comparable to a delicate champagne, full of character and body. Thing is, if we tried to make it again, we wouldn't know how. 

That problem is on the path TO HOLY RESOLUTION!

So, there I was, after an hour of meditation and visualizing (as you know, I'm into some hippy-dippy stuff, but I know you're okay with that because, "hey, it can't hurt, right?" and the end point is delightful, authentic mead that is good for the world). I had visualized our sour meads being a backbone of our meadery's product line. Wonderful and consistent. The gold standard in sour meads in the world. 

No kidding, later that afternoon, who should show up on our doorstep but PhD in Molecular Biology Dr. James Pfau of Real Brewer's Yeast, the yeast lab/company just up the street that we'd heard of but never worked with.

He came to introduce himself and asked how he might be able to help us. I told him we'd made the best sour mead yet and that we'd like to make it again, and again, and again, forever. Problem: Don't have bacterial culture to do so.

"That should be no problem." -Dr. Pfau's words, which hopefully will be revealed to be true!

As shown in the picture to the right, he plated our sour mead culture and is confident he's isolated the lactobacillus responsible so he can create a starter culture for us to test. If it works, holy smokes, we might have the sour mead bacteria to build a whole category from. Stay tuned.

> TASTING ROOM EXPANSION | We have significantly increased the capacity to delight people with our mead in our tasting room.  While we still need more chairs, we have way more room for people to come with friends and drink mead.

We are also open more hours, Wednesday and Thursday, 2-8pm you can now enjoy mead and watch the magic happen in the production area. (Tips to the production team encouraged for high quality performances.)


THE FRONTIER OF MEAD

OPEN SOURCE MEAD | We love open source technology. We believe it has the power to change the world through overcoming two of Adam Smith's barriers to an efficient liberal economy, perfect information and no barriers to entry.

Consider our friends at Open Source Ecology. They are doing amazing stuff. They endeavor to lead the open source design of the 50 machines needed to create the comforts of modern life for about 50% of the market cost on average, often way more.

If they succeed, a tractor would cost $10-$15K instead of $45K. This kind of radical price reduction could democratize the creation of value, now the equipment needed to create value in the world would be readily available. Barriers to entry overcome.

At the heart of this transformational approach to the economy is a transformational approach to intellectual property. By sharing the recipes, outcomes and lessons learned of everything we produce with a Creative Commons License, we intend to enable other mead makers to make better mead, faster, and grow the mead industry in order to delight more people and help the bees and those that keep them. (Almost) Perfect Access to Information, achieved.

Therefore, over the next few weeks, we'll be posting all of our recipes and outcomes on our website. A veritable treasure trove of mead data. We don't have time to organize it, but if anyone reading this does or knows of someone who does, that would be awesome. We'd love to collaborate with the goal of more people making more great mead for the good of the world.

THE BUZZ ON THE BEES

Mead can fight superbugs like MRSA. The lactobacillus in bees' stomachs are incredibly potent disease fighters and raw honey carries those beneficial bacteria. (No wonder the word for medicine may have come from the word for mead)
